Oriental Cole Slaw

My sister-in-law, Suzann introduced us to this yummy twist on Cole Slaw.
Below is the recipe:

  • 1 pound cole slaw (I purchased the tri-color cole slaw in the bag)
  • 3/4 cup chopped green onion
  • 2 (3 oz.) packages oriental flavored ramen noodles (uncooked)
  • 1 cup slivered almonds
  • 1/2 cup unsalted sunflower seeds (shucked)
  • 1/4 cup apple cider vinegar
  • 1/4 cup sugar
  • 1/2 cup salad oil

  • In large bowl, combine Cole slaw, chopped green onion, sunflower seeds and almonds.
In a small bowl, combine vinegar, oil and the two seasoning packets from the Ramen Noodles.

Pour liquid over the salad and stir to combine.
    Refrigerate until time to serve.
Before serving, stir in broken dry noodles from the Ramen packages.
I put the noodles in a Ziploc bag and pound to break them up.
Serve and eat!  Very crunchy and fresh tasting.
A taste of sweet and sour from the sugar, vinegar and spice packets.
Great for pot lucks and family gatherings.

    Thank you for reading!
    Keep Calm and Kerri On!
