Homemade Pecan Shortbread Cookies

These cookies are light and crispy.  With the full flavor of pecans.
They taste similar to a Pecan Sandy.
Very Yummy.

PECAN SHORTBREAD COOKIES
 
3/4 cup pecans - chopped
8 tablespoons unsalted butter at room temperature
1/2 cup confectioner's sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
3/4 cup almond flour
3/4 cup all-purpose flour
 
Preheat oven to 350 degrees. 
Toast the pecans in a skillet over medium heat - stirring often, until fragrant and roasted, about 4 minutes. Let cool,


 Combine butter, confectioner's sugar and vanilla in a large bowl.
In a medium bowl stir together the flours and salt. 
Add the cooled nuts into the flour mixture and
add to the wet mixture by thirds. 
Do not over stir the dough.
Shape the dough into a log with the diameter about 1-1/2 inches.
Wrap in wax paper or parchment paper, twist or tie off the ends.
Refrigerate for at least one hour.
When chilled, the dough is very firm.
Cut into 1/4" disks.
and place on baking sheet or stone.
Bake at 350 degrees for 16 to 20 minutes,
until edges are light brown.
Let sit on baking sheet for 5 minutes before removing to a cooling rack.
