Norma's Scotcheroos

Chewy, chocolatey, butterscotchy, peanut buttery, goodness.

This recipe is from my husband's mother, Norma. She would always have these waiting for us whenever we came for a visit.
Gather your ingredients:
6 cups of Crisp Rice Cereal
1 cup of White Corn Syrup
1 cup of Granulated Sugar
1 cup of Creamy Peanut Butter
1-1/4 cup Butterscotch Chips
1-1/4 cup Semi-sweet Chocolate Chips
 
 
In a large microwavable bowl, mix corn syrup and sugar.  Microwave for 30 second intervals until the sugar is dissolved.
Stir in the Peanut Butter.
Fold in the 6 cups of Crisp Rice Cereal, until all of it is coated.
Press the mixture into a greased 9"x13" pan - your hands work great for this.
(just remember to wash them first!)
In a medium microwavable bowl, combine butterscotch and chocolate chips.  Microwave at 15 second intervals (stirring after each) until chocolate chips are almost melted, then stir to melt the little bits left.  This will insure that you don't "over cook" the chocolate mixture.
Spread the chocolate mixture evenly over the top.
Chill in the refrigerator until the chocolate topping is firm.
Cut into 1"x2" bars.

P.S.  I think Norma must have doubled the cereal and sugar/peanut butter mixture, because her bars were much thicker.  Hmmmm.....I'll have to try that next time!
